Step 1: Prep the Pot

For pint-size jars, the pot must be two-thirds full. For quart jars, the pot must be half full. After this, set the canning rack on the pan rim, cover it with a lid, and boil the water over high heat.
Step 2: Prep the Jars
It is very important to make sure that all your utensils are sterilized before canning your BBQ sauce. While the water is boiling in the canner, wash all your jars along with their lids and rings. Step 4: The Water Bath
Place the jars back on the rack and in the water. Make sure that they are covered at least one inch by the water. Next, cover your pot or canner with the lid again and heat it for 15 minutes on medium to high heat. Following this, turn off the heat and let the jar sit in the water for another five minutes.
Step 5: Cool Them Down
Using jar lifting tongs, remove your jars from the hot water and place them on a clean towel on your counter. Without tightening the bands, leave the jars undisturbed at room temperature for the next 12 to 24 hours. For the best results, place the jars more than an inch apart from each other for maximum cooling.
Step 6: Check the Seals
The next step involves checking the jars for their seal. When pressed on their center, the lids should not move up and down if they are sealed properly. In case the lid pops up, you should refrigerate them, and use those jars first.
After checking their seals, remove the bands from the jar and clean the top of the lid carefully with a clean paper towel. It is optional to replace the bands but make sure not to screw on too tightly, or the seal may break.

Label the BBQ sauce jars, and place them in a cool area away from sunlight.
